Make pie! And lemonade. And fish. And salad dressing. And cake. And custard. And tea. And well you get the idea. My parents lemon tree is covered in ripe fruit and with just as many waiting to ripen they where more then happy to have me cart three big bags up north with me.

When I was a kid there where always lemons around in the winter, just about everyone in Southern California has a lemon tree or they have a next door neighbor that has one. It always seemed funny that stores even bother to try and sell them since we could never seem to give all of our extras away. Now that I am up north and on my own and all my friends live in apartments I have to buy lemons, the horror! So I will spend a couple hours squeezing two bags of lemons to store the juice for cooking and counting down the days till New Years when I can go and get somemore. I used to think nothing of walking out back to pluck a huge, baseball sized lemon off the tree to squeeze on the fish for dinner or in my tea, now I know how lucky I was.
